Have you ever found yourself with a surplus of ripe bananas and unsure of what to do with them? Fear not, for a quick and easy banana bread recipe is here to save the day! In this recipe, I used my Ninja blender to easily blend the ingredients together, but a Vitamina or Kitchen-Aid mixer will work just as well. The first time I shared this recipe, our daughter was 6. Now she’s 15. Time goes by really quickly!
To make this delicious and easy bread, you will need the following ingredients:
- 2 eggs
- 1/2 cup of cooled melted butter
- 3-4 very ripe bananas
- 2 teaspoons of vanilla
- 1 teaspoon of baking soda
- 1/4 teaspoon of salt
- 3/4 cup of brown sugar
- 2 cups of flour
- 3/4 to 1 cup of chopped walnuts
This recipe serves 6-7 people and takes about 1 hour and 10 minutes to make, including 10 minutes of prep time.
To get started, preheat your oven to 350 degrees and place all the ingredients in your Ninja blender in the order listed above. Be sure to mix on a low setting and pulse the ingredients, starting with the eggs. Add the melted butter, followed by the bananas, vanilla, baking soda, salt, brown sugar, and finally the flour-one cup at a time.
Once all the ingredients are blended, remove the blade and fold in the chopped walnuts. Then pour the batter into a greased and floured pan. If you can’t find a loaf pan like mine, don’t worry! An 8 x 8 x 2 pan works just as well. Bake the bread for about 60 minutes or until a toothpick or skewer comes out clean. Be sure not to overbake it.
